Put in a mixer bowl
½ dl good olive oil
½ teaspoon of garlic and parsley salt
1-3 garlic gloves
½ dl of organic almonds
10-20 g water cress
Mix together well until it becomes a paste and leave for 15 minutes in a fridge before serving.
The amount of garlic you should use depends entirely how much you like garlic. 3 gloves in this sauce is a lot and the sauce becomes quite strong.
This sauce is usable in almost any dish with fried fish or meat but I especially like it on top steamed beetroots and fried goat cheese. You should try!
Tip: you can have another sauce by using peanuts instead of almonds and rocket instead of water cress.
